Spicy Mexican Bean Soup
Paired with a simple bread or salad, this chunky soup makes for a full meal and is very comforting, too. Make it in just a few minutes after a long, hard day at work

Ingredients
1 small red onion, finely chopped
¼ red bell pepper, finely chopped
¼ yellow bell pepper, finely chopped
1 green chili, finely chopped
1 clove of garlic, finely chopped
1 tsp. Fajita seasoning
½ tsp. red chili flakes
½ tsp. dried oregano
2 tsp. olive oil
Salt to taste
1 cup water
2 tbsp. grated cheese to serve
2 tbsp. fresh coriander, chopped
Method
1. Heat olive oil in a pot and add garlic and green chili. Saute until fragrant. Tip in the onions and bell peppers and sauté until smoky
2. Add the chili flakes, oregano, and Fajita seasoning
3. Empty the can of refried beans in the pot and add water
4. Season with salt; remember the canned beans contain salt, too. Bring to a boil and simmer gently for about 5 minutes
5. Turn off the heat and ladle into bowls. Serve with a sprinkling of cheese and coriander and a side of chips
